Vegetable Loaf

This is my personal copyrighted recipe but it's published to be shared with fellow foodies!

Vegetable Loaf

6 potatoes mashed
3 portobello mushrooms
1 vidalia white onion
10 miniature carrots
1 half of a red pepper/half yellow pepper
One cup of kale (remove stems)
About 2-3 cloves of garlic

Spices - I use cayenne pepper in very small pinches. It's very potent.
Spiced curry powder
Sea salt
Tricolored pepper
Reduced fluids from portobello mushrooms

Boil potatoes with skin (more nutrients that way). Cut & dice portobello. Save fluids to add to potatoes. Not all of it but enough to give the potatoes some moisture. Mix all chopped ingredients together the same way you'd prepare a meatloaf.  

Bake at 350 until golden.

This is my recipe. I don't use measuring cups. I just go by eye.

** High fiber content ** not recommended if you have a weak intestinal system or plan on being in small confined spaces with strangers:)
